Pakistani Indian Malai Kofta Recipe

Kofta ingredients:
½ kg potatoes (boiled, peeled and mashed)
1 tsp coriander powder
1 tsp cumin powder
1 tsp red chili powder
2 tbsp crumbled paneer
1/4cup ricotta cheese
¼ cup bread crumbs
¼ cup white flour
¼ cup milk powder
4-5chopped green chilies
Salt to taste
Oil for deep frying

Curry ingredients:

1 cup oil for curry
1 big onion (grind to paste)
1tsp ginger garlic paste
2 tsp coriander powder
2 tsp cumin powder
2 tsp red chili powder
½ cup tomato paste
5-6 cashew nuts (grind to paste)
4-5 almonds (grind to paste)
1large black cardamom and
1-2small green cardamom
½ tsp garam masala powder
1 bay leaf
2 tsp dried fenugreek (kasuri meethi)
½ bunch fresh coriander
1 cup of full cream
3-4 green chilies
Salt to taste

Method:
1-For curry heat oil add onion paste, ginger/garlic, almond paste, cashews paste, green chili paste, cumin powder, red chili powder, coriander powder and salt fry well. Along this add both cardamoms and bay leaf (tied in a piece of cloth remove them before serving) also.
2-Fry till the oil comes out.
3- Add tomato paste fry well.
4- Now add fenugreek and 2-3 cups of water. Boil the water and low the flame thick the gravy for 15mins.
5- For kofta mix all the ingredients of kofta in boiled mashed potatoes. Make balls firmly.
6- Deep fry the balls very carefully till golden brown take them out from the oil.
7-Add them to gravy just before serving.
8- Garnish with fresh coriander. Serve with steam rice.
